Dessert Nachos: They Happened

I said I’d make ’em, and I did, and they were a hit! How could they not be? Cinnamon, strawberries, whipped cream…but they look like nachos. Absurd. Big thanks to @ForkandBeans for creating this treat and tweeting about it!

As always, the day I decided to make dessert nachos, I lacked a few ingredients and had to substitute. This is what I did, with a few things I had on hand from a recent Trader Joe’s run:

  • 2 bags cinnamon and sugar pita chips
  • 14 organic strawberries
  • 2 T organic cucumber skin, diced
  • 1/2 c organic mint, chopped
  • 2 organic lemon wedges, to serve
  • 1 package frozen whipped cream
  • India Tree coloring

Defrost frozen whipped cream at least a few hours before using. Thinly slice off outer part of each strawberry, discarding seeds, to achieve a diced tomato appearance. Combine strawberries, cucumber skin, and mint (saving some for garnish) in bowl to create the “salsa.”

Separate desired amount of whipped cream into halves, using one half as “sour cream” and the other as “melted cheese.” Using India Tree colors, dye second half of whipped cream orange.

Divide cinnamon and sugar pita chips between two small platters, spread cheese over chips, disperse salsa over cheese and chips, and top each arrangement with two dollops of sour cream. Sprinkle remaining mint over everything. Serve platters with 1 lemon wedge each.
